he vineyards are the base and reference of Benanti’s wines. Attention to the
viticulture is already required on selection of vineyards and continues
with their care and cultivation, executed with absolute respect
for the environment and biologic systems.
Vintage is executed with the same care. It is a very important
step in the productive process, during which grapes are selected by hand,
harvesting that ensures only intact and ripe grapes.
The grapes, both white and red, are brought to the cellar exclusively
in cases (18-20 Kg) to guarantee maximum integrity of the fruit.
In the vintages or periods when temperatures are high, grapes are
transferred with
refrigerated trucks to ensure that grapes arrive in excellent conditions
of integrity and at

optimal temperature for successive fermentation.
Respect for the product is also absolute when grapes are separated
from the stacks and then pressed. These operations are done through
soft working systems. The grape skins (marcks) are immediately softly
pressed and brought to distillery to produce grappa.
The wine produced is controlled during all the phases, attempting
to avoid the use of any mechanical, physical and chemical equipment to respect
its authenticity as much as possible. This procedure, together with the
other peculiarities of Benanti’s wines, concurs to increase their longevities,
by maintaining and improving their organoleptic characteristics over time.
