Minnella 100%,
grown as alberello (free standing bush). Minnella,
is an indigenous white grape variety cultivated only on Etna and
it has always been consociated with
Nerello Mascalese and/or
Carricante.
The name Minnella (“Minnedda janca”), was given by the vine growers
of Etna because of the shape of the grape, similar to a “minna”
which in Sicilian means breast. There is no historical notes about the origin
of
this grape variety. The grapes ripen at the second and third week
of September, earlier than Carricante (first and second week of October).

the grapes intact are softly pressed. Fermentation takes place in steel tanks
at 18-20°C. The wine is left to mature for a certain period of time
before being placed in bottles.
