Il Musico® is a passito wine made from grapes of Moscato of Noto (SR).

Moscato of Noto 100%. The cultivation is classic espalier with a vine training system double cordon, no irrigation, and a density of implantation of 8.300 plants per per hectare. The grapes yield per vinestock vary from 0,8 to 1 kg.

the grapes are harvested when they reach a good balance of acid-sugar, at the end of August beginning of September. They are placed on racks (grating) suitable for drying. In a ventilated environment at a temperature of 25 °C, the grapes are slowly dried.
the grapes, without stems, after brief cold maturation are pressed in a pneumatic press. The fermentation takes place at a temperature of about 23-25 °C. As soon as the alcohol content reaches 10-11 °C, the fermentation is blocked. The moscato passito produced has a residual of about 100 g of sugar per liter with an alcohol content of about 10-11 °C.
